One of nonfiction legend Wiseman’s longest films is also his most delicious: a ruminative, satisfying peek into the workings of a three-star Michelin restaurant in rural France. Once you enter the world of Maison Troisgros, run by head chef Michel Troisgros and his sons César and Léo, poised to inherit the business, you won’t want to leave, whether you’re eavesdropping on menu creation; listening to chefs expound on the pleasures of passionfruit; watching sous-chefs slice, dice, and sauce; witnessing the realization of dauntingly complex lunch and dinner services; or taking meditative and informative detours to local farms. Wiseman’s patience pays off in enormously satisfying fashion, allowing the viewer to luxuriate in the pleasures and pains of running a fine dining establishment, which connects it to his amazing, 50-plus year career surveying complicated institutions of all kinds.
